My wife and I cruise quite often, this being our 28th. Port Canaveral is easy and very convenient for us. We have sailed multiple times on the Carnival Dream and totally enjoyed our cruises. Unfortunately, the Sunshine did not live up to the standards set by the Dream and other cruise experiences.
Embarkation was a quick and easy; no problem what so ever.
We headed directly to the Cucina del Capitano for some pasta. The wait was not too bad, the linguine with red clam sauce with garlic shrimp was delicious.

Nice cabin almost midships. Nice size shower. Did not hear noises; felt very little rock and roll. Near elevators but yet not so far as to be in the flow of traffic.
